Fresh Ravioli with Tomatoes, Asparagus & Garlic Herb Sauce
This Ravioli with Tomatoes, Asparagus, Garlic, and Herbs is a fast and flavorful pasta dish made with cheese-filled ravioli, fresh cherry tomatoes, tender asparagus, and fragrant herbs. Ready in just 25 minutes, it’s the perfect light yet comforting weeknight dinner or elegant meal for entertaining.
Ingredients
- 1 package cheese ravioli fresh or frozen
- 1 cup cherry tomatoes halved
- 1 bunch asparagus trimmed and cut into 2-inch pieces
- 2–3 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon butter optional
- 1/4 teaspoon red pepper flakes optional
- Salt and black pepper to taste
- 2 tablespoons fresh basil or parsley chopped
- Grated Parmesan for serving (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook ravioli according to package instructions. Drain, reserving 1/2 cup pasta water.
- In a large skillet over medium heat, heat olive oil. Sauté garlic for 30 seconds until fragrant.
- Add asparagus and cook for 4–5 minutes until tender-crisp.
- Add cherry tomatoes and cook for another 2–3 minutes until softened. Stir in red pepper flakes, salt, and black pepper.
- Add cooked ravioli to the skillet and gently toss everything together. Add reserved pasta water as needed to loosen. Stir in butter if using.
- Sprinkle with fresh herbs and Parmesan before serving.
Notes
- Ravioli options: Spinach & ricotta, mushroom, or lobster ravioli work great.
- Add protein: Grilled chicken, cooked shrimp, or chickpeas make it heartier.
- Extra greens: Stir in spinach or arugula at the end.
