  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic minced
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • For the buffalo sauce:
  • 1/3 cup buffalo sauce
  • 2 tablespoons butter melted
  • Optional:
  • Ranch or blue cheese dressing
  • Celery sticks
  • Chopped parsley or green onions

Instructions
 

  • Prepare mixture:
  • In a bowl, combine ground chicken, breadcrumbs, egg, garlic, onion powder, salt, and pepper. Mix gently until combined.
  • Shape meatballs:
  • Roll into evenly sized balls and place on a baking sheet.
  • Cook meatballs:
  • Bake: Preheat oven to 400°F (200°C) and bake for 15–18 minutes until cooked through.
  • Or pan-fry: Cook in a skillet over medium heat until browned and fully cooked.
  • Make sauce:
  • Mix buffalo sauce with melted butter in a bowl.
  • Coat meatballs:
  • Toss cooked meatballs in the sauce until evenly coated.
  • Serve:
  • Serve warm with ranch or blue cheese dressing and celery sticks if desired.
