Ingredients

  • Core Four Ingredients:
  • 3 –4 lbs chuck roast
  • 1 packet French onion soup mix
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • Optional Add-Ins:
  • Chopped onions carrots, and potatoes
  • 1 –2 tsp Worcestershire sauce for extra depth

Instructions

  • Step 1 — Prep the Ingredients
  • Trim excess fat from your chuck roast.
  • In a small bowl, whisk together French onion soup mix, cream of mushroom soup, and beef broth.
  • Step 2 — Layer in the Crock Pot
  • Place the roast in the slow cooker.
  • Pour soup mixture over the roast, coating evenly.
  • Add optional vegetables around or under the meat if desired.
  • Step 3 — Slow Cook
  • Cover and cook on LOW for 8–9 hrs or HIGH for 4–5 hrs.
  • Avoid opening the lid frequently — it releases heat and increases cook time.
  • Step 4 — Serve
  • Remove roast and slice or shred.
  • Spoon gravy over meat.
  • Serve with mashed potatoes, noodles, or rice.

Notes

  • Choose a well-marbled chuck roast for maximum tenderness.
  • Don’t skip the broth — keeps meat moist.
  • For thicker gravy, stir in 1 tbsp cornstarch + 2 tbsp water after cooking.
  • Let roast rest 5–10 minutes before slicing to redistribute juices.
  • Store leftovers in an airtight container for 4 days or freeze up to 3 months.
