Ingredients
  

  • 1 cup creamy peanut butter
  • 1 ½ cups rolled oats
  • cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • In a medium saucepan over low heat, combine peanut butter and maple syrup (or honey). Stir until smooth and fully blended.
  • Remove from heat and stir in the vanilla extract and salt.
  • Fold in the rolled oats until evenly coated.
  • Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  • Flatten each mound slightly into cookie shapes.
  • Refrigerate for at least 30 minutes, or until firm.
  • Serve chilled or at room temperature.
