Ingredients
  

Wet Ingredients

  • 1 cup applesauce
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Topping

  • 1/4 cup sugar For sprinkling on top
  • 1 teaspoon cinnamon For sprinkling on top

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
  • In a large mixing bowl, whisk together the applesauce, sugars, vegetable oil, eggs, and vanilla extract until smooth.
  • In another bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t over-mix; a few lumps are perfectly fine!
  • Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • In a small bowl, mix the extra sugar and cinnamon for the topping, then sprinkle it over the muffin batter.
  • Place the muffin tin in the oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Use fresh ingredients for best results. Customize your muffins by adding nuts, raisins, or chocolate chips. Store them in an airtight container at room temperature for up to three days or freeze for up to three months.
