  • Salmon
  • 1 pound fresh salmon skin removed and cut into bite-sized cubes
  • tablespoons olive oil
  • tablespoons cornstarch
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Bang Bang Sauce
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 –2 tablespoons sriracha to taste
  • 1 tablespoon honey
  • Optional garnish: sliced green onions sesame seeds

Instructions
 

  • Prep
  • Preheat oven to 425°F (220°C) or preheat air fryer to 400°F (205°C).
  • Pat salmon dry with paper towels.
  • In a bowl, toss salmon with olive oil, cornstarch, garlic powder, paprika, salt, and pepper until evenly coated.
  • In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey. Set aside.

  • Arrange salmon bites on a parchment-lined baking sheet, leaving space between pieces.
  • Bake for 10–12 minutes, flipping halfway, until golden and cooked through.
  • Air Fryer Method
  • Place salmon bites in a single layer in the air fryer basket.
  • Air fry for 7–9 minutes, shaking halfway through.
  • Finish
  • Toss hot salmon gently with bang bang sauce or drizzle sauce over the top.
  • Rest for 2–3 minutes, then garnish and serve.

Notes

  • Cornstarch is key for crisp edges—don’t skip it.
  • Sauce can be adjusted easily: more mayo for mild, more sriracha for heat.
  • Serve sauce on the side if you prefer extra crisp salmon.
