Ingredients
  

  • 1.5 lbs boneles, sskinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper cut into 1-inch squares
  • 1 green bell pepper,cut into 1-inch squares
  • 1 red onion cut into chunks
  • ½ cup barbecue sauce, store-bought or homemade
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions
 

  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • In a large bowl, toss chicken pieces with olive oil, garlic powder, salt, and pepper.
  • Thread chicken, pineapple, red and green bell peppers, and red onion onto skewers, alternating ingredients for color and flavor.
  • Preheat grill to medium-high heat and lightly oil the grates.
  • Grill kabobs for 10–12 minutes, turning occasionally. Brush with barbecue sauce during the last few minutes of cooking.
  • Once chicken is fully cooked and slightly charred, remove from grill and let rest for a few minutes.
  • Serve warm with extra barbecue sauce if desired.
