Total Time 35 minutes mins
- 1 ½ lbs beef tenderloin tips
- 2 tbsp olive oil or butter
- 1 cup sliced mushrooms cremini, button, or baby bella
- 1 small onion finely chopped
- 2 cloves garlic minced
- 2 tbsp all-purpose flour or cornstarch for gluten-free
- 1 cup beef broth plus more as needed
- ½ cup heavy cream optional for richness
- 1 tsp fresh thyme or rosemary
- Salt and pepper to taste
Sear the beef: Heat oil in a skillet over medium-high heat. Add beef tips and cook until browned on all sides. Remove and set aside.
Sauté the vegetables: In the same pan, add onions and mushrooms. Cook until golden brown and softened.
Add garlic and herbs: Stir for 1 minute to release aroma.
Make the gravy: Sprinkle flour over the mixture, stir, and gradually pour in beef broth. Scrape up browned bits from the pan.
Simmer: Return beef to the pan. Lower heat and simmer for 10–15 minutes until thickened.
Finish with cream: Stir in heavy cream for a velvety finish. Adjust salt and pepper to taste.
-
Pat beef dry before searing for perfect browning.
-
Don’t overcrowd the pan — sear in batches if needed.
-
Let beef rest briefly before serving to retain juiciness.
