Ingredients

  • 4 sandwich rolls or ciabatta buns
  • ½ cup basil pesto store-bought or homemade
  • 4 slices mozzarella or provolone cheese
  • 1 ripe tomato sliced
  • 1 handful fresh spinach or arugula
  • 1 tablespoon olive oil or butter for toasting
  • Optional Add-Ons:
  • Avocado slices for creaminess
  • Roasted red peppers or caramelized onions
  • Balsamic glaze for a tangy finish
  • A sprinkle of crushed red pepper for spice

Instructions
 

  • Prepare the Chicken:
  • Slice or shred your cooked chicken. If using leftovers, reheat briefly in a pan with a bit of olive oil, salt, and pepper.
  • Toast the Bread:
  • Brush the bread with butter or olive oil and toast in a skillet until golden and crisp on both sides.
  • Assemble the Sandwich:
  • Spread pesto on the bottom half of each bun. Layer with chicken, cheese, tomato slices, and greens. Top with the remaining bread.
