Ingredients

  • 2 cups cooked chicken breast shredded or diced
  • 1 package 9–12 oz cheese tortellini (fresh or frozen)
  • 4 cups chicken broth low-sodium preferred
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup chopped onion
  • 2–3 cloves garlic minced
  • 1 teaspoon dried Italian herbs oregano, basil, thyme
  • Salt and pepper to taste
  • Optional Additions:
  • Baby spinach or kale
  • Heavy cream for a creamy version
  • Parmesan cheese for topping
  • Red pepper flakes for spice

Instructions
 

  • Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook for 5–7 minutes until softened. Add garlic and sauté for 1 minute.
  • Add Broth and Chicken: Pour in the chicken broth and add shredded chicken, Italian herbs, salt, and pepper. Simmer for 10 minutes.
  • Cook the Tortellini: Add tortellini to the simmering soup and cook according to package directions, about 3–5 minutes.
  • Add Greens (Optional): Stir in spinach or kale in the last 2 minutes of cooking.
  • Finish and Serve: Adjust seasoning to taste. Serve hot with grated Parmesan and fresh herbs on top.

Notes

  • Don’t overcook tortellini to keep it tender.
  • Add cream at the end for a rich, creamy version.
  • Freeze the base without tortellini for best results.
