There’s something deeply comforting about a slow-cooked meal — the kind that fills your home with the aroma of simmering herbs, tender beef, and rich, savory gravy. This Crock Pot roast with gravy delivers that cozy, homey feeling in every bite — hearty, flavorful, and effortlessly satisfying.

Ingredients
  

  • For the Roast:
  • 3–4 lb chuck roast
  • 2 tbsp olive oil or butter, for browning
  • 1 packet onion soup mix or homemade seasoning
  • 1 cup beef broth low-sodium
  • 2 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper to taste
  • Optional Add-Ins:
  • 3 carrots chopped
  • 3 potatoes diced
  • 1 onion sliced
  • Fresh herbs thyme or rosemary
  • For the Gravy:
  • 2 tbsp cornstarch
  • 2 tbsp cold water to make a slurry
  • 1 –2 cups slow cooker juices

Instructions
 

  • Sear the Roast (Optional but Worth It)
  • Heat olive oil in a skillet and sear the roast for 3–4 minutes per side until browned.
  • Prepare the Slow Cooker
  • Place sliced onions, carrots, and potatoes (if using) at the bottom of your Crock Pot. Set the seared roast on top.
  • Add Seasoning and Broth
  • Sprinkle the onion soup mix or your seasoning blend over the roast. Pour in beef broth and Worcestershire sauce. Add garlic and onion powder.
  • Slow Cook to Perfection
  • Cover and cook on low for 8–9 hours or high for 4–5 hours, until the roast is fork-tender.
  • Make the Gravy
  • Remove the roast and strain out 1–2 cups of cooking liquid. Whisk cornstarch + water slurry into hot juices in a saucepan; simmer until thickened. Season as needed.
  • Serve and Enjoy
  • Shred or slice the roast, drizzle the rich gravy on top, and serve with mashed potatoes, roasted vegetables, or buttered noodles.

Notes

  • Brown the meat first: Adds caramelized flavor and depth.
  • Use fresh herbs: A sprig of rosemary or thyme makes a big difference.
  • Don’t rush it: The longer it cooks, the more tender and flavorful it becomes.
