- 1 lb ground chicken turkey, or Italian sausage
- 1 can 15 oz white beans (cannellini or navy beans), drained and rinsed
- 4 cups chicken broth or stock
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 medium onion diced
- 3 garlic cloves minced
- 2 cups chopped spinach or zucchini
- 6–8 lasagna noodles broken into pieces
- Optional:
- Grated Parmesan for garnish
- 1 tsp Italian herbs basil, oregano, thyme
- Red pepper flakes for heat
- 2 tbsp cream or a pinch of lemon zest for richness
In a skillet, brown the meat with garlic and onion until fragrant. Drain excess fat.
Transfer to the Crock Pot. Add chicken broth, beans, spinach or zucchini, and herbs. Stir to combine.
Cook on low for 4–6 hours or on high for 2–3 hours.
About 30 minutes before serving, add broken lasagna noodles and ricotta cheese. Stir gently.
