Ingredients

  • Main Ingredients:
  • 1 lb ground beef
  • 4 cups potatoes diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 3 cups chicken or beef broth
  • 2 cups shredded cheddar cheese
  • 1 ½ cups milk or heavy cream
  • 2 tbsp butter
  • 1 tbsp flour optional, for thickening
  • Salt pepper, paprika, and a pinch of mustard powder
  • Optional Add-Ins:
  • Diced pickles or pickle relish
  • 1 tbsp Worcestershire sauce
  • Chopped carrots or celery for extra flavor

Instructions

  • Brown the Beef:
  • In a skillet, cook ground beef with onion and garlic until browned. Drain excess fat.
  • Add to Crockpot:
  • Transfer cooked beef to your slow cooker. Add potatoes, broth, and seasonings. Stir gently to combine.
  • Slow Cook:
  • Cover and cook on Low for 6–8 hours or High for 3–4 hours, until potatoes are tender.
  • Make It Creamy:
  • About 30 minutes before serving, stir in milk, cheese, and butter. Let everything melt together. For a thicker soup, mix flour with a bit of milk and stir it in.
  • Serve:
  • Ladle into bowls and top with extra cheese, chives, or croutons. Serve warm and enjoy!

Notes

  • Use freshly grated cheese for the smoothest texture.
  • Avoid boiling after adding milk and cheese to prevent curdling.
  • For a low-carb version, swap potatoes with cauliflower.
  • Freeze before adding dairy for best texture.
