Ingredients
  

  • For the Gravy:
  • ¼ cup turkey drippings from roasted turkey
  • 2 tablespoons butter or turkey fat
  • ¼ cup all-purpose flour
  • 2–3 cups turkey or chicken broth adjust for desired thickness
  • Salt and black pepper to taste
  • Optional Add-Ons:
  • 2 tablespoons heavy cream for extra richness
  • ½ teaspoon garlic or onion powder
  • 1 tablespoon Worcestershire sauce
  • Fresh herbs thyme, sage, or rosemary, finely chopped

Instructions
 

  • Step 1: Collect the Drippings
  • After roasting your turkey, pour the drippings into a heatproof cup.
  • Let them sit for a few minutes so the fat rises to the top.
  • Skim off and reserve about 2 tablespoons of fat for your roux.
  • Step 2: Make the Roux
  • In a medium saucepan, melt the butter or turkey fat over medium heat.
  • Whisk in the flour and cook for 2–4 minutes, until it turns golden and smells nutty.
  • Step 3: Add Broth and Drippings
  • Slowly pour in the broth, whisking constantly to prevent lumps.
  • Add the turkey drippings and continue whisking until the gravy thickens.
  • If too thick, add more broth; if too thin, simmer longer until desired consistency.
  • Step 4: Season and Finish
  • Stir in salt, pepper, and any optional flavor add-ins.
  • For an ultra-smooth texture, strain through a fine mesh sieve before serving.
