Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 can 28 oz crushed tomatoes
  • 4 cups chicken or beef broth
  • 8 oz broken lasagna noodles
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • Fresh parsley or basil for garnish

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until fragrant.
  • Add ground beef or sausage. Cook until browned, then drain excess fat.
  • Stir in tomato paste, crushed tomatoes, and broth. Season with oregano, basil, thyme, salt, and pepper. Simmer 15–20 minutes.
  • Add broken lasagna noodles and cook until tender.
  • In a small bowl, mix ricotta, mozzarella, and Parmesan.
  • Ladle soup into bowls and top each with a spoonful of the cheese mixture.
  • Garnish with fresh parsley or basil before serving.

Notes

  • Don’t overcook the noodles; they’ll continue to soften in the soup.
  • Freeze without noodles for best texture when reheating.
