Ingredients

  • For the Chicken:
  • 3–4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • ½ tsp paprika optional
  • For the Sauce:
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ cup sundried tomatoes chopped
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes adjust to taste
  • Fresh basil or parsley for garnish

Instructions

  • Season and Sear the Chicken:
  • Season chicken breasts with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat and cook chicken for 5–6 minutes per side until golden brown. Remove and set aside.
  • Sauté the Garlic and Tomatoes:
  • In the same skillet, reduce heat slightly and add garlic. Sauté for 30 seconds until fragrant, then add sundried tomatoes and cook for another minute.
  • Make the Cream Sauce:
  • Pour in chicken broth and heavy cream. Stir and let simmer until slightly thickened. Add Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until the sauce becomes smooth and creamy.
  • Combine and Simmer:
  • Return the chicken to the skillet, spooning sauce over each piece. Simmer for 5–7 minutes to let the flavors blend and the chicken soak up the sauce.
  • Garnish and Serve:
  • Sprinkle with fresh basil or parsley and serve hot with pasta, rice, or mashed potatoes.

Notes

  • Pound chicken for even cooking and tenderness.
  • Use freshly grated Parmesan for best flavor and melting texture.
  • Adjust spice level by increasing or reducing red pepper flakes.
  • Reheat gently with a splash of cream or broth to restore sauce consistency.
  • You can substitute chicken thighs for a juicier version.
