Total Time 1 hour

Ingredients

  • For the Cookie Dough:
  • 1 cup unsalted butter softened
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • S’mores Add-Ins:
  • 1 ½ cups chocolate chips or chunks
  • 1 ½ cups mini marshmallows
  • 1 cup crushed graham crackers
  • Optional Extras:
  • Hershey’s bar pieces for topping
  • A drizzle of melted chocolate after baking
  • A pinch of flaky sea salt for balance

Instructions

  • Step 1 — Make the Cookie Dough
  • In a large bowl, cream butter, brown sugar, and granulated sugar together until smooth and fluffy.
  • Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  • In another bowl, whisk flour, baking soda, and salt. Gradually mix dry ingredients into the wet mixture until just combined.
  • Step 2 — Add the S’mores Mix-Ins
  • Fold in chocolate chips, crushed graham crackers, and mini marshmallows.
  • Chill the dough for 30 minutes — this helps prevent spreading and keeps the marshmallows from melting too fast.
  • Step 3 — Bake the Cookies
  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper and scoop dough into balls, spacing them 2 inches apart.
  • Bake for 10–12 minutes, until edges are golden and centers are soft.
  • Press a few extra marshmallows or chocolate pieces on top right after baking for a bakery-style look.
  • Step 4 — Cool and Serve
  • Let cookies cool for 5 minutes on the tray, then transfer to a rack.
  • Serve warm for maximum gooeyness, or store once fully cooled.

Notes

  • Keep marshmallows tucked inside the dough to prevent burning or sticking.
  • Don’t skip chilling — it’s key for thick, chewy cookies.
  • Choose your chocolate wisely: milk chocolate for classic flavor, dark chocolate for richness.
  • For an extra campfire touch, lightly toast the tops with a kitchen torch before serving.
