  • 1/2 cup protein powder whey, plant-based, your choice
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch salt

Wet Ingredients

  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk
  • 1/4 cup peanut butter or almond butter

Optional Ingredients

  • chocolate chips or nuts for added flavor

Preparation

  • Preheat your oven to 350°F (175°C). It’s essential to have your oven ready to ensure even baking.
  • In a large mixing bowl, combine the rolled oats, protein powder, almond flour, baking powder, cinnamon, and salt. Stir until the dry ingredients are evenly mixed.
  • In another bowl, blend the honey or maple syrup, almond milk, and peanut butter. Stir until you achieve a smooth consistency.
  • Slowly pour the wet mixture into the dry ingredients. Stir until everything is well combined. If you’re adding chocolate chips or nuts, fold them in now.
  • Using a spoon or cookie scoop, portion the dough onto a baking sheet lined with parchment paper. Flatten each biscuit slightly to ensure they bake evenly.

Baking

  • Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the biscuits are golden brown.
  • Allow them to cool for a few minutes before transferring them to a cooling rack.

Notes

Experiment with flavors like nutmeg or vanilla extract. For a vegan version, substitute honey with maple syrup and use plant-based protein powder. Store in an airtight container for up to a week.
