- Main Ingredients:
- 2 tablespoons olive oil
- 1 medium onion diced
- 3 cloves garlic minced
- 3 carrots sliced
- 3 celery stalks chopped
- 1 large red bell pepper diced
- 1 ½ pounds boneless skinless chicken breasts (or thighs)
- 1 can 14.5 oz diced tomatoes
- 8 cups chicken broth
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon Italian seasoning
- ½ teaspoon salt to taste
- ¼ teaspoon black pepper
- 1 cup small pasta ditalini or orzo
- Fresh parsley or basil for garnish
- Optional Add-Ins:
- A splash of lemon juice for brightness
- Shredded Parmesan for serving
- A dash of hot sauce for extra heat
Sauté the Vegetables:
In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and bell pepper. Cook until softened, about 5 minutes. Stir in garlic and cook another minute until fragrant.
Add Chicken and Broth:
Add chicken pieces, diced tomatoes (with juices), and chicken broth. Stir in crushed red pepper flakes, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce to low heat and simmer for 25–30 minutes, until chicken is tender.
Shred the Chicken:
Remove chicken from the pot and shred it with two forks. Return shredded chicken to the soup and stir to combine.
Add the Pasta:
Bring the soup back to a simmer and add pasta. Cook for 8–10 minutes, or until the pasta is tender. Add more broth if needed.
Finish and Serve:
Stir in lemon juice (if using) and adjust seasoning. Ladle into bowls and top with Parmesan cheese and fresh herbs. Serve warm with crusty bread or salad.
