Ingredients

Fritter Mixture

  • 2 cups mashed potatoes (about 2 medium potatoes) Use cold mashed potatoes for better binding.
  • 1 cup shredded sharp cheddar cheese Feel free to experiment with different cheeses.
  • 1/4 cup chopped fresh chives
  • 1/2 cup all-purpose flour Helps bind the fritters.
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 2 tablespoons unsalted butter, melted
  • Olive oil for frying Enough to cover the bottom of the frying pan.

Instructions

Preparation

  • If you don’t already have mashed potatoes, start by peeling, boiling, and mashing your potatoes until smooth. Allow them to cool before using.
  • In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, chopped chives, flour, baking powder, baking soda, salt, black pepper, beaten egg, and melted butter. Stir until well combined.

Cooking

  • In a large frying pan, heat about 1/4 inch of olive oil over medium heat. Make sure the oil is hot enough before you begin frying the fritters.
  • Once the mixture is ready, scoop a heaping tablespoon and gently flatten it into a patty shape.
  • Carefully place your formed fritters into the hot oil, cooking for about 3-4 minutes on each side or until they’re golden brown and crispy. Avoid overcrowding the pan.
  • Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve them warm, garnished with extra chives if desired.

Notes

Use cold mashed potatoes for better frying. You can experiment with different cheeses or add herbs and vegetables for variations. Make ahead and freeze if desired.
