Ingredients
  

  • 2 cups cooked chicken shredded or chopped
  • 2 bell peppers any color, thinly sliced
  • 1 small onion sliced (optional)
  • cups shredded cheese cheddar, Monterey Jack, or blend
  • ½ cup ranch dressing
  • 1–2 tbsp olive oil or butter for sautéing and grilling
  • 4 large flour tortillas burrito-size
  • Salt and pepper to taste

Instructions
 

  • Heat oil or butter in a skillet over medium heat.
  • Sauté bell peppers (and onions, if using) until soft and lightly caramelized.
  • Add cooked chicken, season with salt and pepper, and stir to combine.
  • Remove from heat and stir in ranch dressing until evenly coated.
  • Lay tortillas flat and sprinkle cheese down the center of each.
  • Spoon chicken-pepper mixture over the cheese and roll into burritos.
  • Grill burritos in a clean skillet or panini press until golden and crispy on both sides, and cheese is melted.
  • Serve hot.
