  • 1 pound ground beef or turkey Use lean varieties for a healthier option.
  • 1 cup uncooked long-grain white rice
  • 1 can diced tomatoes (14.5 ounces), undrained
  • 1 can black beans (15 ounces), drained and rinsed
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese Can substitute with other cheese.
  • 1 cup corn (frozen or fresh)

Cooking

  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked, draining any excess fat.
  • Add the uncooked rice, chicken broth, diced tomatoes, black beans, corn, and taco seasoning. Stir well to combine all ingredients.
  • Bring the mixture to a gentle boil. Once boiling, cover the skillet with a lid, reduce the heat to low, and let it simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.
  • Once the rice is fully cooked, remove the skillet from the heat and sprinkle the shredded cheddar cheese on top. Cover the lid again and let it sit for a few minutes to let the cheese melt.
  • When the cheese is melted to your liking, serve hot, adding your choice of toppings.
