Ingredients
  

  • 2 cups cooked chicken sliced or shredded
  • 4 cups mixed greens spinach, arugula, or lettuce
  • 1 cup fresh blueberries
  • ½ cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Optional: sliced almonds or walnuts
  • Optional: red onion thinly sliced

Instructions
 

  • Wash and dry greens thoroughly.
  • In a small bowl, whisk together olive oil, vinegar (or lemon juice), honey, salt, and pepper.
  • In a large bowl, combine mixed greens, chicken, and blueberries.
  • Drizzle dressing over the salad.
  • Toss gently to combine.
  • Sprinkle feta cheese on top.
  • Add optional nuts or red onion if desired.
  • Serve immediately or chill briefly before serving.

Notes

  • Add dressing just before serving to keep greens crisp.
  • Adjust sweetness and acidity to taste.
  • Use rotisserie or grilled chicken for best flavor.
