  • 1 pound Boneless skinless chicken breasts or thighs For tenderness
  • 2 cups Carrots, chopped
  • 2 cups Celery, chopped
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 8 cups Chicken broth or stock Homemade or store-bought

Herbs and Spices

  • 2 leaves Bay leaves
  • 1 teaspoon Thyme, dried
  • 1 tablespoon Parsley, fresh, chopped For garnish and flavor
  • to taste Salt and pepper For seasoning

Preparation

  • Chop all your veggies and cube the chicken to streamline your cooking process.
  • In a large pot, heat a bit of olive oil over medium heat. Add chopped onions, garlic, carrots, and celery. Sauté until softened.

Cooking

  • Add the chicken to the pot and cook until just browned, about 5-7 minutes.
  • Pour in your chicken broth and season with bay leaves, thyme, salt, and pepper. Bring to a boil.
  • Reduce heat and let it simmer for at least 30 minutes until the chicken is cooked through and veggies are tender.
  • Optionally, you can throw in some quick-cooking veggies like spinach during the last 5 minutes.

Serving

  • Remove bay leaves, taste the soup, and adjust seasoning if needed.
  • Ladle into bowls and enjoy your creation with crusty bread or crackers.

Notes

For a flavor boost, try adding a splash of lemon juice or vinegar at the end. You can also stir in some cream or coconut milk just before serving for a creamy texture.
