Dough Ingredients

  • 4 cups all-purpose flour Can substitute with half whole wheat flour.
  • 1/4 cup sugar Adjust for sweetness as desired.
  • 2 teaspoons cinnamon Add nutmeg or cardamom for extra flavor.
  • 1 packet active dry yeast (2 1/4 teaspoons) Ensure yeast is fresh.
  • 1 teaspoon salt
  • 1 cup milk Warm, about 110°F (43°C).
  • 1/4 cup unsalted butter Melted.
  • 2 large eggs
  • 1 cup raisins Optional: soak in warm water.

Preparation

  • Activate the Yeast: In a small bowl, combine warm milk with the yeast and a teaspoon of sugar. Let it sit for about 5-10 minutes until frothy.
  • Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cinnamon, and salt until well combined.
  • Combine Wet Ingredients: In another bowl, beat the eggs and melted butter together. Once the yeast mixture is frothy, add it to the egg and butter mixture.
  • Combine Mixtures: Stir the wet mixture into the dry ingredients until a dough begins to form.
  • Knead the Dough: Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  • Incorporate Raisins: Flatten the dough slightly and fold in the raisins carefully until evenly distributed.

Rising and Baking

  • First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place until doubled, about 1-2 hours.
  • Shape the Loaf: After rising, punch down the dough and turn it out onto a floured surface. Shape it into a loaf and place it into a greased loaf pan.
  • Second Rise: Cover again and let it rise until doubled, about 30-45 minutes.
  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Bake: Once the loaf has risen, bake for 30-35 minutes until golden and sounds hollow when tapped.
  • Cool and Enjoy: Allow your cinnamon raisin bread to cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy warm or toasted!
