- 2 large eggs
- ⅓ cup milk or heavy cream
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 tbsp sugar white or brown, or a mix
- 2 tbsp butter plus more for cooking
- ¼ cup powdered sugar for glaze
- 1 –2 tbsp milk or cream for glaze
- 1 tbsp cream cheese optional, for a richer glaze
- Pinch of salt
In a bowl, whisk eggs, milk, vanilla, a pinch of salt, and ½ tsp cinnamon.
Add bread cubes and gently toss to coat—avoid soaking too long.
Heat butter in a skillet over medium heat. Add coated bread cubes and cook until golden and crisp on all sides, about 2–3 minutes per side.
In a small bowl, mix remaining cinnamon and sugar. Toss cooked bites in the cinnamon-sugar mixture while still warm.
In a separate bowl, whisk powdered sugar with milk (and cream cheese if using) until smooth for glaze.
Drizzle glaze over bites before serving or serve on the side for dipping.
