Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the cake flour, sugar, baking powder, salt, coconut flakes, and lime zest.
  • Grate the frozen butter into the flour mixture and toss lightly to combine.
  • In a separate bowl, combine the heavy cream, egg, and vanilla. Gradually add this mixture to the dry ingredients, stirring gently until just combined.
  • Gently fold in the diced mango until evenly distributed throughout the dough.
  • Turn the dough onto a lightly floured surface and pat it into a 1-inch thick circle. Cut into 8 triangles and place them on the prepared baking sheet.

Baking

  • Bake for 15-20 minutes, or until the scones are puffed and golden on top.

Preparing the Lime Glaze

  • While the scones cool, mix the lime juice with confectioner's sugar to achieve your desired glaze consistency.
