- 1 ½ lbs steak sirloin, ribeye, or tenderloin, cut into bite-sized cubes
- Salt and black pepper to taste
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 3 cloves garlic minced
- 2 tbsp fresh parsley chopped
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- ½ tsp crushed red pepper flakes
- ½ tsp smoked paprika
- 1 tsp Worcestershire sauce
Cut steak into cubes and season with salt and black pepper.
Heat olive oil in a large skillet over high heat.
Sear steak bites in batches, 2–3 minutes per side, until browned. Remove and set aside.
In the same skillet, melt butter. Stir in garlic, Dijon mustard, lemon juice, red pepper flakes, smoked paprika, Worcestershire sauce, and parsley.
Simmer for 1–2 minutes until fragrant.
Return steak bites to the skillet and toss to coat in cowboy butter.
Serve immediately with extra sauce spooned over the top.
