  • 1 package 9–12 oz cheese tortellini, fresh or frozen
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 can 14 oz crushed tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale roughly chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Optional: red pepper flakes for heat

  • 1 bell pepper diced
  • Grated Parmesan for garnish

Instructions
 

  • Step 1 – Cook the Sausage
  • In a large pot over medium heat, brown the Italian sausage, breaking it into small pieces until golden and slightly crispy.
  • Step 2 – Sauté Aromatics
  • Add diced onion and garlic to the pot. Cook 3–4 minutes until softened and fragrant.
  • Step 3 – Build the Broth
  • Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, pepper, and optional red pepper flakes. Bring to a gentle simmer to allow flavors to meld.
  • Step 4 – Add Tortellini and Greens
  • Add tortellini and cook until just tender. Stir in spinach or kale for color and nutrients.
  • Step 5 – Make It Creamy
  • Slowly pour in heavy cream, simmering gently until the soup thickens slightly. Taste and adjust seasoning.
  • Step 6 – Serve and Garnish
