Ingredients
  

  • Main Ingredients:
  • 1 lb 450 g mushrooms (Cremini or Baby Bella), cleaned and sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 –4 garlic cloves minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian herbs thyme, oregano, or basil
  • Salt and black pepper to taste
  • Optional Add-Ons:
  • Pinch of red pepper flakes
  • Fresh parsley for garnish

Instructions
 

  • Sauté the Mushrooms
  • Heat butter and olive oil in a large skillet over medium-high heat.
  • Add mushrooms in batches to avoid crowding. Cook until golden brown, about 5–7 minutes per batch.
  • Add Garlic and Herbs
  • Add minced garlic and Italian herbs to the pan. Sauté for 1 minute until fragrant.
  • Create the Creamy Sauce
  • Pour in heavy cream and simmer gently.
  • Stir in Parmesan cheese and sun-dried tomatoes. Add white wine if using and let it cook off.
  • Simmer until sauce thickens slightly.
  • Add Spinach and Combine
  • Stir in fresh spinach until wilted.
  • Adjust seasoning with salt, pepper, or red pepper flakes as desired.
  • Serve
  • Serve mushrooms over pasta, rice, mashed potatoes, or toasted bread. Garnish with fresh parsley.

Notes

  • Don’t rush the sear browning mushrooms properly builds deep flavor.
  • Adjust sauce thickness with milk or broth if too thick; simmer longer if too thin.
  • Use freshly grated Parmesan for smooth, rich texture.
  • Add a squeeze of lemon for brightness.
