- 1 large eggplant or 2 small
- 2 tablespoons olive oil or avocado oil spray
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika or Italian seasoning
- Optional Coating for Crispiness:
- ½ cup breadcrumbs or panko
- ¼ cup grated Parmesan cheese
- 1 egg or plant-based milk for binding
Prep Eggplant:
Wash and slice into even rounds or cubes. Optionally, sprinkle with salt and let sit 10–15 minutes to remove moisture, then pat dry.
Season & Coat:
Lightly spray or brush with oil. Mix salt, pepper, garlic powder, and paprika. For extra crunch, dip in beaten egg/milk and coat with breadcrumbs or panko.
Air Fry:
Preheat air fryer to 375°F (190°C) for 3 minutes. Place eggplant in a single layer, avoid overcrowding. Cook 12–15 minutes, flipping halfway, until golden and crisp.
Serve:
Remove, let cool 1 minute, sprinkle with Parmesan or parsley, and enjoy warm.
