- 1 lb ground beef
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1 packet taco seasoning or 2–3 tbsp homemade
- 2 tbsp tomato paste or 1/4 cup salsa
- 1 to 1 1/2 cups shredded cheddar or Mexican blend cheese
- 6 large flour tortillas
- Vegetable oil for frying or brushing
- Optional toppings: sour cream salsa, guacamole, chopped cilantro
In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
Add onion and garlic; sauté until softened.
Stir in taco seasoning and tomato paste or salsa. Simmer for 2–3 minutes.
Remove from heat and let mixture cool slightly. Stir in shredded cheese.
Warm tortillas to make them pliable. Add beef mixture to center of each.
Fold sides inward and roll tightly to form chimichangas.
To fry: Heat oil in skillet; fry seam-side down until golden brown on all sides.
To bake: Brush with oil and bake at 400°F (200°C) for 20–25 minutes.
To air-fry: Spray with oil and cook at 380°F (193°C) for 10–12 minutes, flipping halfway.
Serve hot with desired toppings.
