Ingredients

  • 2 slices sourdough brioche, or artisan white bread
  • 2 tablespoons butter softened
  • ½ cup blueberries fresh or frozen, thawed and drained
  • 2 –3 ounces cheese Brie, cream cheese, mozzarella, or white cheddar
  • 1 teaspoon honey or maple syrup optional
  • Pinch of salt or lemon zest optional
  • Optional Add-Ins:
  • A few fresh basil leaves
  • Drizzle of balsamic glaze
  • Sprinkle of cinnamon

Instructions
 

  • Prepare the Blueberry Filling:
  • In a small saucepan, warm blueberries with a drizzle of honey or sugar over medium-low heat. Let them simmer for 2–3 minutes until softened and syrupy. Remove from heat and let cool slightly.
  • Assemble the Sandwich:
  • Butter one side of each bread slice.
  • On the unbuttered side, spread your choice of cheese evenly.
  • Spoon a thin layer of the blueberry mixture over the cheese.
  • Top with the second slice of bread, buttered side facing out.
  • Grill to Crispy Perfection:
  • Heat a non-stick skillet or griddle over medium heat.
  • Cook the sandwich for 2–3 minutes per side, pressing gently until golden brown and the cheese has melted.
  • For extra crispiness, cover with a lid while cooking.
  • Serve:
