Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs panko or regular
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • Olive oil or cooking spray for frying, baking, or air frying
  • 1 large head romaine lettuce chopped
  • 1/3 cup Caesar dressing
  • 1/4 cup parmesan cheese shaved or grated
  • 1/2 cup croutons
  • Lemon wedges optional, for garnish

Instructions
 

  • Slice chicken breasts horizontally into cutlets. Season both sides with salt, pepper, and garlic powder.
  • Dredge chicken in flour, dip in beaten eggs, and coat with breadcrumbs.
  • Cook chicken until golden and crispy:
  • Skillet: Fry in oil over medium heat, 3–4 minutes per side.
  • Air Fryer: Spray with oil, cook at 390°F for 12–14 minutes, flipping halfway.
  • Oven: Bake at 425°F for 18–20 minutes, flipping once and spraying with oil.
  • While chicken cooks, toss chopped romaine with Caesar dressing in a large bowl.
  • Slice cooked chicken and place on top of dressed lettuce.
  • Add parmesan, croutons, and a squeeze of lemon if using. Serve immediately.

Notes

  • Use panko for extra crunch and air spray for golden results in air fryer or oven.
  • Swap chicken breasts for thighs for juicier meat.
  • For a lighter version, use grilled chicken or a low-fat dressing.
  • To keep crispy, store chicken and salad separately and assemble just before eating.
