- 2–3 medium sweet potatoes peeled and sliced into fries
- 2 tbsp olive oil
- 1 tbsp cornstarch for extra crispiness
- ½ tsp garlic powder
- ½ tsp paprika
- Salt & pepper to taste
- Optional:
- ½ tsp smoked paprika
- Fresh herbs for serving parsley, rosemary
Step 1 — Prep the Potatoes
Cut sweet potatoes into even matchstick-style fries. Pat dry with paper towels to remove excess moisture.
Step 2 — Coat & Season
Add fries to a bowl. Toss with cornstarch until lightly coated, then add oil and all seasonings.
Step 3 — Arrange for Crispiness
Spread fries in a single layer on a parchment-lined baking sheet. Make sure they’re not touching—this is key for crunch.
Step 4 — Bake
Bake at 425°F (220°C) for 25–30 minutes, flipping halfway through. Bake longer for extra crisp edges.
Step 5 — Serve
Sprinkle with extra salt or herbs and enjoy hot and crispy!
