These crispy oven baked sweet potato fries are the perfect mix of tender inside and golden-crisp outside. With simple seasoning and a few key tricks, you get fries that taste restaurant-quality but are healthier and easy to make at home. They’re great as a snack, side dish, or a guilt-free craving fix.

Ingredients
  

  • 2–3 medium sweet potatoes peeled and sliced into fries
  • 2 tbsp olive oil
  • 1 tbsp cornstarch for extra crispiness
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • Optional:
  • ½ tsp smoked paprika
  • Fresh herbs for serving parsley, rosemary

Instructions
 

  • Step 1 — Prep the Potatoes
  • Cut sweet potatoes into even matchstick-style fries. Pat dry with paper towels to remove excess moisture.
  • Step 2 — Coat & Season
  • Add fries to a bowl. Toss with cornstarch until lightly coated, then add oil and all seasonings.
  • Step 3 — Arrange for Crispiness
  • Spread fries in a single layer on a parchment-lined baking sheet. Make sure they’re not touching—this is key for crunch.
  • Step 4 — Bake
  • Bake at 425°F (220°C) for 25–30 minutes, flipping halfway through. Bake longer for extra crisp edges.
  • Step 5 — Serve
  • Sprinkle with extra salt or herbs and enjoy hot and crispy!

Notes

  • Cut fries evenly so they cook at the same rate.
  • DO NOT overcrowd the pan — use two sheets if needed.
  • Cornstarch = crisp edges without frying.
  • For even more crunch, broil for the last 1–2 minutes.
