Crispy Smashed Carrot Bites are the ultimate healthy snack — sweet, savory, and perfectly crunchy. With just carrots, olive oil, and a few seasonings, you can turn a simple veggie into a crowd-pleasing, guilt-free bite that’s easy, flavorful, and endlessly customizable.

- 1 lb 450g carrots, peeled (baby carrots work too)
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- Salt and pepper to taste
- Optional Add-Ons:
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh herbs parsley, thyme, or dill
- 1 tsp honey or balsamic glaze
- A pinch of chili flakes
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Boil carrots in salted water for 10–12 minutes until just tender. Drain and pat completely dry.
Smash each carrot gently with the bottom of a glass on the prepared baking sheet.
Season and oil: Brush or drizzle with olive oil, then sprinkle garlic powder, paprika, salt, and pepper on both sides.
Roast for 20–25 minutes, flipping halfway through, until golden and crisp on the edges.
Finish and serve: Top with Parmesan, herbs, or honey drizzle if desired. Serve hot for best texture.
