Crispy Smashed Carrot Bites are the ultimate healthy snack — sweet, savory, and perfectly crunchy. With just carrots, olive oil, and a few seasonings, you can turn a simple veggie into a crowd-pleasing, guilt-free bite that’s easy, flavorful, and endlessly customizable.

Ingredients
  

  • 1 lb 450g carrots, peeled (baby carrots work too)
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Optional Add-Ons:
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp chopped fresh herbs parsley, thyme, or dill
  • 1 tsp honey or balsamic glaze
  • A pinch of chili flakes

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Boil carrots in salted water for 10–12 minutes until just tender. Drain and pat completely dry.
  • Smash each carrot gently with the bottom of a glass on the prepared baking sheet.
  • Season and oil: Brush or drizzle with olive oil, then sprinkle garlic powder, paprika, salt, and pepper on both sides.
  • Roast for 20–25 minutes, flipping halfway through, until golden and crisp on the edges.
  • Finish and serve: Top with Parmesan, herbs, or honey drizzle if desired. Serve hot for best texture.

Notes

  • Make sure carrots are fully dry before roasting moisture prevents crisping.
  • For extra crunch, broil for 2–3 minutes at the end.
  • To reheat, bake at 375°F (190°C) for 8–10 minutes; avoid the microwave.
  • Air fryer method: Cook at 400°F (200°C) for 15–18 minutes, shaking halfway through.
