  • 2 medium zucchinis Grated and moisture squeezed out
  • 1/2 cup all-purpose flour Or almond flour for a gluten-free option
  • 1/2 cup grated cheese Cheddar or parmesan works great
  • 1/2 medium onion Finely grated
  • 1 large egg
  • Salt and pepper To taste
  • Olive oil or cooking spray For frying

Preparation

  • Wash and dry the zucchinis. Grate them using a box grater.
  • Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  • In a mixing bowl, combine the grated zucchini, grated onion, flour, cheese, and egg. Season with salt and pepper. Mix everything together until well combined.

Cooking

  • In a non-stick skillet, add olive oil over medium heat and allow it to warm up.
  • Scoop a handful of the mixture and flatten it into a patty shape with your hands. Place it carefully in the heated skillet. Repeat until the skillet is full but not overcrowded.
  • Fry the patties for about 4-5 minutes on each side or until they turn a lovely golden brown.
  • Transfer the cooked hash browns onto a paper towel to absorb any excess oil and serve hot.

Ensure zucchinis are well-drained for crispiness. For variations, consider adding fresh herbs or spices before cooking.
