  • 1 lb ground beef Use lean ground beef for a healthier version.
  • 1 cup milk Substitute with low-fat milk for a lighter option.
  • 1 cup shredded cheddar cheese Feel free to experiment with other cheese types.

Vegetables

  • 1 cup potatoes, diced For a thicker soup, mash some of the potatoes before serving.
  • 1 cup carrots, diced Add more veggies based on the season for a unique twist.
  • 1 large onion, chopped

Liquids and Seasonings

  • 4 cups beef broth Adjust as needed to manage the thickness of the soup.
  • 2 tsp garlic powder
  • 1 tsp paprika
  • to taste salt and pepper Adjust based on personal preference.

Preparation

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  • In your slow cooker, mix the browned beef, diced potatoes, carrots, onion, garlic powder, and paprika.
  • Pour in the beef broth.

Cooking

  • Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the milk and add the shredded cheddar cheese, allowing it to melt.
  • Add salt and pepper according to your taste.

Serving

  • Ladle the soup into bowls and garnish with extra cheese or fresh herbs if desired.

Notes

This soup can be stored in the fridge for 3-4 days. For thicker soup, mash some potatoes before serving. For a fresher taste, use seasonal vegetables.
