Ingredients
  

For the Tacos

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning or homemade blend
  • 1 cup salsa your choice – mild, medium, or spicy
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • to taste optional toppings: shredded lettuce, diced tomatoes, cheese, sour cream, avocado, fresh cilantro
  • tortillas flour or corn to your preference

Preparation

  • Place the chicken breasts at the bottom of your crockpot.
  • Sprinkle the taco seasoning evenly over the chicken, adding the salsa on top.
  • Pour the black beans and corn over the chicken.
  • Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken using two forks directly in the pot and mix with the other ingredients.
  • Fill your tortillas with the chicken mixture and top with your favorite garnishes.

Notes

Store any remaining chicken taco filling in an airtight container in the fridge for up to three days. To reheat, warm in the microwave or pan on low heat. Mind your portions and use corn tortillas for gluten-free options.
