Ingredients
  

  • For the Chicken:
  • 2 lbs 900g boneless, skinless chicken thighs (or breasts)
  • ½ cup honey
  • ¼ cup soy sauce use low-sodium if preferred
  • ¼ cup ketchup
  • 4–5 garlic cloves minced
  • 1 teaspoon sesame oil optional
  • Optional Add-Ins:
  • ½ small onion sliced
  • ½ bell pepper sliced
  • ¼ teaspoon chili flakes for heat
  • To Thicken the Sauce Optional:
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • For Garnish and Serving:
  • Chopped green onions
  • Sesame seeds
  • Steamed rice noodles, or vegetables

Instructions
 

  • Step 1: Mix the Sauce
  • In a small bowl, whisk together honey, soy sauce, ketchup, garlic, and sesame oil until smooth.
  • Step 2: Add to Crockpot
  • Place chicken in the slow cooker.
  • Pour the sauce evenly over the chicken, making sure it’s well coated.
  • (Optional) Add onions, bell peppers, or chili flakes for extra flavor.
  • Step 3: Slow Cook
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and easily shredded.
  • Step 4: Thicken the Sauce (Optional)
  • Remove chicken and whisk together cornstarch and cold water in a small bowl.
  • Stir the slurry into the sauce, then cook for 10 minutes until thickened.
  • Return chicken to the crockpot and toss to coat.
  • Step 5: Serve and Enjoy
  • Sprinkle with sesame seeds and green onions.
  • Serve over rice, noodles, or steamed vegetables.

Notes

  • Use chicken thighs for maximum flavor and juiciness.
  • Whisk sauce well to prevent honey from settling at the bottom.
  • Avoid overcooking: Chicken stays tender on Low heat.
