Ingredients
  

  • Essential Ingredients
  • 1 lb 450 g fresh mushrooms, sliced (button, cremini, or mixed)
  • 1 medium onion diced
  • 2 –3 cloves garlic minced
  • 4 cups vegetable or chicken broth
  • 1 cup cream milk, or dairy-free alternative
  • 2 tbsp butter or olive oil
  • 1 –2 tbsp flour or cornstarch optional, for thickening
  • Salt and pepper to taste
  • Optional Ingredients / Toppings
  • Fresh herbs: thyme rosemary, parsley
  • Croutons roasted mushrooms

Instructions
 

  • Step 1 – Prep Mushrooms
  • Clean and slice fresh mushrooms.
  • Step 2 – Sauté Aromatics
  • In a skillet, sauté onions and garlic in butter or olive oil for 2–3 minutes until fragrant.
  • Step 3 – Combine in Crockpot
  • Add mushrooms, sautéed onions and garlic, broth, and seasonings to the crockpot.
  • Step 4 – Cook
  • Cook on low for 6–8 hours or high for 3–4 hours until mushrooms are tender and flavors meld.
  • Step 5 – Add Cream / Thicken
  • Stir in cream or milk.
  • Optional: Mix flour or cornstarch with a little cold water and stir in to thicken.
  • Step 6 – Blend (Optional)
  • Use an immersion blender for a smooth soup, or leave mushrooms chunky for a rustic texture.
  • Step 7 – Serve
  • Garnish with fresh herbs, croutons. Serve warm.

Notes

  • Use a mix of mushrooms for deeper flavor.
  • Sauté mushrooms first to release moisture and enhance taste.
  • Add cream at the end to avoid curdling.
  • Adjust consistency with broth or cream depending on preference.
