- 1 lb 450 g fresh mushrooms, sliced (button, cremini, or mixed)
- 1 medium onion diced
- 2 –3 cloves garlic minced
- 4 cups vegetable or chicken broth
- 1 cup cream milk, or dairy-free alternative
- 2 tbsp butter or olive oil
- 1 –2 tbsp flour or cornstarch optional, for thickening
- Salt and pepper to taste
- Optional Ingredients / Toppings
- Fresh herbs: thyme rosemary, parsley
- Croutons roasted mushrooms
Step 1 – Prep Mushrooms
Clean and slice fresh mushrooms.
Step 2 – Sauté Aromatics
In a skillet, sauté onions and garlic in butter or olive oil for 2–3 minutes until fragrant.
Step 3 – Combine in Crockpot
Add mushrooms, sautéed onions and garlic, broth, and seasonings to the crockpot.
Step 4 – Cook
Cook on low for 6–8 hours or high for 3–4 hours until mushrooms are tender and flavors meld.
Step 5 – Add Cream / Thicken
Stir in cream or milk.
Optional: Mix flour or cornstarch with a little cold water and stir in to thicken.
Step 6 – Blend (Optional)
Use an immersion blender for a smooth soup, or leave mushrooms chunky for a rustic texture.
Step 7 – Serve
Garnish with fresh herbs, croutons. Serve warm.
