- 6 –7 medium potatoes peeled and diced
- 1 medium onion chopped
- 3 garlic cloves minced
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half for lighter version
- 1 cup shredded cheddar cheese
- Salt & pepper to taste
