Ingredients
  

  • Main Ingredients:
  • 1 lb ground sausage Italian or breakfast-style
  • 6 –7 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half for lighter version
  • 1 cup shredded cheddar cheese
  • Salt & pepper to taste
  • Optional Toppings:
  • Chopped green onions
  • Extra shredded cheese
  • Red pepper flakes for heat
  • Fresh spinach or kale stir in near the end

Instructions
 

  • Brown the Sausage: Cook sausage in a skillet over medium heat until browned. Drain excess fat, then add to the crockpot.
  • Add Vegetables & Broth: Stir in diced potatoes, onion, garlic, and chicken broth. Season with salt and pepper.
  • Slow Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours until potatoes are tender.
  • Make It Creamy: Stir in heavy cream and shredded cheddar. Mix until melted and smooth. For a thicker soup, mash a few potatoes directly in the pot.
  • Serve: Ladle into bowls and top with green onions, extra cheese, or red pepper flakes. Enjoy warm!
