Ingredients
  

  • 2 cups cucumber thinly sliced or julienned
  • 1 cup carrots shredded or julienned
  • For the dressing:
  • 2 tablespoons rice vinegar or lemon juice
  • 1 tablespoon olive oil or sesame oil
  • 1 teaspoon honey or sugar
  • Salt and black pepper to taste
  • Optional additions:
  • Sesame seeds
  • Fresh herbs cilantro or parsley
  • Chili flakes

Instructions
 

  • Thinly slice the cucumbers and shred or julienne the carrots.
  • In a small bowl, whisk together vinegar or lemon juice, oil, honey, salt, and pepper.
  • Place the vegetables in a large bowl and pour the dressing over them.
  • Toss well until everything is evenly coated.
  • Let the salad sit for 10–15 minutes to allow the flavors to develop.
  • Garnish with sesame seeds or herbs if desired, then serve.
