  • 2 large cucumbers, thinly sliced English cucumbers are preferred.
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced (optional) Adds a bit of zing.
  • 1/4 cup fresh dill or parsley, chopped Fresh herbs enhance flavor.

Dressing Ingredients

  • 1 Juice of 1 lemon
  • 2 tablespoons olive oil
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Wash the cucumbers thoroughly. Slice them thinly and place them in a large mixing bowl.
  • Sprinkle the crumbled feta cheese and sliced red onion (if using) over the cucumbers. Add the chopped dill or parsley.
  • In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper to your liking.
  • Drizzle the dressing over the salad and gently toss everything together until well combined.
  • For the best flavor, refrigerate the salad for about 30 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Make sure to dress the salad only before serving to maintain freshness.
