  • 8 oz cream cheese softened
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • Salt and black pepper to taste
  • Topping:
  • 2 cups cherry or Roma tomatoes halved
  • 8 oz fresh mozzarella cheese sliced or shredded
  • Fresh basil leaves torn or chopped
  • Optional Add-ins:
  • ¼ cup shredded Parmesan cheese
  • Balsamic glaze for drizzling after baking
  • ¼ tsp red pepper flakes for a spicy kick

Instructions

  • Preheat Oven: Set oven to 375°F (190°C).
  • Make the Base: In a bowl, mix softened cream cheese with olive oil, minced garlic, salt, and pepper until smooth. Spread mixture evenly into the bottom of a small baking dish.
  • Layer Toppings: Scatter halved tomatoes over the cream cheese base. Top generously with mozzarella.
  • Bake: Bake for 20 minutes, or until cheese is melted, bubbling, and lightly golden on top.
  • Garnish & Serve: Remove from oven. Add fresh basil and optional balsamic glaze. Serve hot with bread, crackers, or veggies.

Notes

  • Fresh mozzarella provides a creamier melt than pre-shredded cheese.
  • Use ripe tomatoes for the best flavor and natural sweetness.
  • To prepare ahead: Assemble the dip and refrigerate up to 24 hours before baking.
  • Customize with pesto, jalapeños, or individual ramekin servings.
