Ingredients
  

  • Main Ingredients:
  • 3–4 fresh eggs
  • 1 block feta cheese crumbled or whole, in brine preferred
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • ½ teaspoon paprika
  • ½ teaspoon red chili flakes
  • Optional Add-Ons:
  • 1 cup cherry tomatoes halved
  • A handful of spinach or kale
  • ½ cup chopped bell peppers or onions
  • Fresh herbs: parsley dill, or basil
  • Crusty bread or pita for serving

Instructions
 

  • Prepare the Dish
  • Preheat oven to 375°F (190°C).
  • Drizzle olive oil into a small oven-safe skillet or baking dish. Place feta block in the center.
  • Add Veggies & Seasoning
  • Surround feta with cherry tomatoes, spinach, or other veggies (if using).
  • Season with paprika, chili flakes, salt, and pepper. Drizzle lightly with more olive oil.
  • Add Eggs
  • Make small wells and crack eggs into the dish. Keep yolks whole for runny eggs, or whisk lightly for a scrambled-style bake.
  • Bake
  • Bake for 12–15 minutes, depending on how set you want the yolks.
  • Garnish & Serve
  • Sprinkle with fresh herbs and serve warm with crusty bread or pita for dipping.

Notes

  • Don’t overbake or eggs will turn rubbery.
  • Use feta in brine for best texture and flavor.
  • Taste before adding salt feta is naturally salty.
  • Add chili flakes or hot sauce for heat.
