Ingredients
  

Muffin Batter

  • 3 pieces ripe bananas Look for overripe bananas for best flavor.
  • 1/2 cup sugar
  • 1/4 cup melted butter Ensure it's cooled slightly before adding.
  • 1 piece egg Use at room temperature.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats Can substitute with quick oats if necessary.

Streusel Topping

  • 1/4 cup brown sugar
  • 1/4 cup flour For the streusel.
  • 1/2 teaspoon cinnamon

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mash the ripe bananas until smooth.
  • Add the melted butter, sugar, egg, and vanilla extract to the mashed bananas. Mix until well combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and rolled oats.
  • Gradually fold the dry mixture into the wet mixture, just until combined.
  • In a small bowl, combine the brown sugar, 1/4 cup of flour, and cinnamon to prepare the streusel.
  • Pinch in small pieces of cold butter to create a crumbly texture for the streusel.
  • Line a muffin tin with paper liners or grease them lightly. Pour the batter into each cup, filling them about 3/4 full. Sprinkle the streusel generously on top.

Baking

  • Place the muffin tin in the oven and bake for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Use overripe bananas for best flavor, and avoid overmixing the batter to ensure soft muffins. Store in an airtight container for freshness.
