Ingredients
  

  • 1 loaf day-old brioche challah, or French bread (cubed)
  • 1 ½ cups fresh or frozen blueberries
  • 6 large eggs
  • 2 cups milk or half-and-half
  • ½ cup cream cheese optional
  • ½ cup maple syrup or brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Topping:
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup cold butter cubed

Instructions
 

  • Prepare the bread: Cut into cubes and place half in a greased 9x13-inch baking dish.
  • Add blueberries: Sprinkle half over the bread, layer the rest of the bread and remaining blueberries.
  • Make custard: Whisk eggs, milk, vanilla, cinnamon, and syrup until smooth. Pour evenly over the bread and press down gently.
  • Prepare topping: Mix flour, brown sugar, and cinnamon; cut in butter until crumbly. Sprinkle on top.
  • Chill or bake:
  • For make-ahead: Cover and refrigerate overnight.
  • For same-day: Let sit 30 minutes.
  • Bake: Preheat oven to 350°F (175°C) and bake 40–45 minutes until golden and set.
  • Serve: Rest 10 minutes before serving. Top with syrup, powdered sugar, or whipped cream.

Notes

  • Slightly stale bread absorbs the custard best.
  • Frozen blueberries don’t need thawing just toss with flour to prevent color bleeding.
  • Add cream cheese or nuts for extra richness and texture.
  • To prevent sogginess, use sturdy bread and don’t oversoak.
