Ingredients
  

  • 1/2 head green cabbage chopped
  • 1 large onion chopped
  • 2–3 carrots peeled and sliced
  • 2–3 celery stalks sliced
  • 2 cups green beans trimmed and cut
  • 1 bell pepper chopped
  • 3–4 garlic cloves minced
  • 1 can 14.5 oz diced tomatoes (with juices)
  • 6 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon thyme
  • Salt and black pepper to taste
  • Fresh parsley or lemon juice for garnish (optional)

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, carrots, celery, and bell pepper for 5–7 minutes until softened.
  • Stir in garlic and cook for 1 minute.
  • Add cabbage, green beans, diced tomatoes, and broth. Season with oregano, thyme, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, until vegetables are tender.
  • Garnish with parsley or a squeeze of lemon juice before serving, if desired.
