- 2–3 carrots peeled and sliced
- 2–3 celery stalks sliced
- 2 cups green beans trimmed and cut
- 1 bell pepper chopped
- 3–4 garlic cloves minced
- 1 can 14.5 oz diced tomatoes (with juices)
- 6 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon thyme
- Salt and black pepper to taste
- Fresh parsley or lemon juice for garnish (optional)
Heat olive oil in a large pot over medium heat.
