Ingredients
  

  • Main Ingredients:
  • 4–5 medium potatoes peeled and diced
  • 14 oz smoked sausage kielbasa, sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can 10.5 oz cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Optional Add-Ins:
  • Bell peppers or jalapeños chopped
  • Fresh parsley or green onions for garnish
  • A pinch of paprika or smoked paprika for color and depth

Instructions
 

  • Pre-cook Potatoes:
  • Boil diced potatoes for 10 minutes until slightly tender. Drain and set aside.
  • Cook Sausage:
  • In a skillet over medium heat, brown sliced smoked sausage on both sides. Remove and set aside.
  • Sauté Aromatics:
  • In the same skillet, melt butter and sauté onions and garlic until soft and fragrant.
  • Mix Sauce:
  • In a bowl, combine sour cream, cream of mushroom soup, milk, salt, pepper, and half the shredded cheese. Stir until smooth.
  • Assemble:
  • In a greased baking dish, layer potatoes, sausage, and onion mixture. Pour sauce over the top and mix gently to coat.
  • Top & Bake:
  • Sprinkle with remaining cheese and bake at 375°F (190°C) for 30–35 minutes, until bubbly and golden.

Notes

  • Sharp cheddar adds more depth of flavor.
  • Frozen diced potatoes can be used—no need to pre-boil.
  • Make ahead and refrigerate overnight before baking.
  • For a spicier version, use pepper jack cheese or add hot sauce.
  • Easily adaptable to slow cooker: cook on low for 4–6 hours.
